If you grow your own herbs, or if you’ve been to the farmers’ market recently, you know that you often get a lot of herb for your money…and a little goes a long way. And they wilt pretty quickly. So how do you keep the tasty, fresh flavor alive? Here’s our favorite way to freeze herbs…

Freeze fresh herbs by washing and cutting them into pieces that are small enough to fit in an ice-cube tray compartment. Once the entire tray is filled with pieces of herb, carefully add a little water to each compartment. Then it’s ready for the freezer.

Once the herbs are completely frozen, transfer these cubes from the tray to resealable plastic freezer bags. Label the bag with the name of the herb. Then, when a recipe calls for that herb, figure that one ice cube yields one teaspoon of it. To defrost the cube, just put it in a small strainer and run hot water over it or just chuck it into your soup as is.
