You must have seen the popular way to scramble eggs these days…you just break them into a pan and stir away. They taste delicious, and there’s no extra bowl to clean. No matter how you scramble your eggs, here’s a secret ingredient to make them super fluffy…

If you want float-off-your-plate omelets or scrambled eggs, stir in a bit of cornstarch before cooking (about one-quarter teaspoon for two eggs). If you’re making your eggs without pre-whisking (see above), sprinkle the cornstarch onto your eggs just after you crack them into the pan.
