What’s mac and cheese without a good creamy sauce? Here’s how to prevent your milk or cream from scorching.

If you are just about to cook some milk, rinse the pot with cold water first. Shake out all the excess water, but don’t dry. Then add your milk and turn up the heat. This little step will prevent milk from scorching and sticking to the pot.

Also, don’t ever let milk come to a rolling boil. Turn off the heat (or lower it to the lowest simmer) as soon as little bubbles form around the edge. This will also help prevent sticking and scalding.
