Oh, will you just stop it with the diet talk and make a tray of lasagna! Whether you’re a vegetarian, pescatarian or you’ve gone gluten-free, there’s a lasagna recipe out there for you. Here are some easy ways to make great lasagna…

• Don’t bother precooking your lasagna noodles (the regular kind, not the pricey, no- cook ones). Just add extra sauce or water around the edges of your noodle stack, like in this recipe.

• Instead of unsuccessfully smearing your ricotta in a lasagna layer, take a Ziploc plastic bag and put your ricotta inside, snip a corner and pipe it over your sauce or noodles. We got this tip from a review on the above recipe and thought it absolutely brilliant. Thank you, Chef “D”!

• If your lasagna tends to stick to the aluminum foil with which you cover it, spray the foil with nonstick cooking spray before you cover and bake the lasagna.
