To test their freshness, place each raw egg in a pot of water. If the egg floats, it’s rotten. If it stands on its pointy end, it’s 10 to 14 days old. If the egg tilts, it’s about three or four days old. You want an egg to sink and lie on its side. That means it’s fresh—any fresher, and a live chicken will be walking out of your kitchen.
