When all you need is a squirt of juice, don’t dry out the entire lemon or lime by cutting it open. Roll the lemon (or lime) on the counter to break up the membranes and loosen the juice. Puncture the peel with a toothpick and squeeze out the amount you need. Put a piece of masking tape over the hole…or cover the fruit with plastic wrap…or put it in a resealable plastic bag.
