Today is the first day of Kwanzaa, which lasts through January 1st. Kwanzaa celebrates African-American heritage. It’s the Swahili word for “the first” and refers to “the first fruits of the harvest.”

So may we suggest making this delicious tropical fruit salad.

5 cups mixed fresh fruit chunks, such as pineapple, banana, kiwi, papaya and/or mango

2 tablespoons honey

2 tablespoons tangerine or orange juice concentrate

1 teaspoon fresh lime or lemon juice

½ cup dry-roasted peanuts

2 tablespoons crystallized ginger, chopped

Combine the liquids in a small bowl. Put the fresh fruit in a larger bowl, add the liquids and gently toss in the peanuts and ginger. You can serve immediately or cover and chill for about an hour. If you are preparing the salad more than one hour ahead of serving it, stir in the peanuts and ginger just before serving. Makes 4 generous servings.
