Baked apples are a delicious, healthy dessert, but sometimes built-up pressure in the apple’s core makes the apple explode.

You can prevent exploding apples in two ways:
Remove a half-inch of peel around the middle of the apple before you bake it.
Or make 8 shallow slits around the apple before baking it. They allow steam to escape and prevent the peel from splitting.
You can also sprinkle the apple’s bare midriff (or the 8 slits) with lemon juice to stop the breakdown of proteins that can cause a mealy texture.
