We have recommended using a milk soak when you thaw out fish in the refrigerator, but it also is great for fresh fish (or whatever you get from the supermarket or fishmonger that isn’t frozen). Just cover the white fish fillets in milk and soak for at least 20 minutes and no more than 24 hours. Remove the fillets from the milk, shake off the excess liquid and bake in a buttered casserole dish at 350°F for 20 to 25 minutes (watch carefully if your fillets are thin…the flesh should flake easily with a fork). Your fish will be unfishy and melt in your mouth!
