Amy Dixon was a 22-year-old college student on her way to becoming a pharmacist when she was diagnosed with a blinding autoimmune condition. Instead of crumbling, she changed her career path and is now a paratriathlete on her way to the 2016 Special Olympics in Rio de Janeiro, Brazil.
