If the thought of messing with seeds every year makes you cringe, but you love the idea of fresh (practically free!) food, here are three herbs that come back every year (even in the cold northeast) and are practically care-free…

Chives. We planted chives by the seed many years ago in a big decorative pot, and the beautiful green shoots come up every early spring without fail. Chives are great as a garnish, and we use them in any recipe that calls for scallions, spring onions…and sometimes even regular onions.

Thyme. This hearty herb never says die! We cut its branches back in the fall, and they regrow every spring. Thyme adds excellent flavor to most meat and fish dishes and is super in sauces.

Mint. Similar to chives, mint dies down and then comes back in the spring…usually with a vengeance! Keep your mint in a large pot, and water regularly. It does not like super-hot direct sunlight.
